In Santoña was the beginning of the production of anchovies as we know them, however, although the discoverers of salting were, of the Romans, not.
At the end of the last century, on 1883, when an Italian, Giovanni Vella Skatagliota, through simple processes, starting from the salted anchovies and covered with butter, managed to "invent" the anchovy fillets in oil.
Although the inventors of the salting were the Romans in all Cantabria, especially in Santoña and Castro urdiales It continues to be manufactured today following the ancestral processes. In Pez&Co We have tried to follow a faithful elaboration to the principles of salting, recreating the process of handling each anchovy, one by one by the hands of our expert women, using the same utensils used in the past: used fishing nets, Razors and drying rags.
